The Easiest – Make Ahead – Breakfast Burritos


After I had William, many of our friends and family members stopped by with groceries, homemade dinners, even protein cookies to help Joe and I get by in those first couple of weeks. These meals and snacks were a godsend… I truly don’t know what we would have done without them. During this time, two of my girlfriends, Kristin and Vaungaylyn, brought me platters of homemade breakfast burritos. That is where the inspiration for this recipe came from. Those breakfast burritos got me through so many mornings after having William, and many nights I’d even warm one up for dinner as well.

What do I love about these breakfast burritos? Literally everything. They’re easy to make, they’re healthy, and they’re delicious. I also love that you can make any variety you choose… egg whites, turkey bacon, sausage… you really can use whatever you please. What’s more… they’re the perfect way to make breakfast for a crowd, you can make them ahead of time, and you can keep them in the freezer for up to 6 months. <<< How awesome is that?

The Easiest 4th of July Cake!

Hi loves!

I don’t know about you, but I just love the Fourth of July. There’s something about celebrating the amazing country we live in, that really, really makes my heart happy. I couldn’t let you go into this holiday weekend without a good recipe – and this red, white and blue cake is perfect for any BBQ or summer party you’re headed to. Add in a bottle of Rosé and you’re good to go!

So here’s the deal – you can use any cake mix you choose. I made this healthy version for William’s first birthday (that’s where the photo above is from). It’s not the best tasting – but it’s perfect for your 1 year old – not too much sugar!

When it comes to the layers, you have to have some imagination… and really… I say just use what you have in your kitchen! I used one round cake pan and two different sized ramekins to make the layers you see above. Then I made my signature cream cheese frosting… literally just: cream cheese, butter, powdered sugar and vanilla… and then I arranged the berries as you see above. Top it with a sprig of mint, and you’re good to go!

Easy as pie – or cake. 🙂 Happy almost weekend, My Loves! I hope it is a sweet one!

Throwback Post: How I Lost My Baby Weight

Let me preface this post by saying that I am not a salad person.

I eat salads because they are a necessary evil of good health and proper nutrition. I eat salads because I know that they help me fit in my skinny jeans. And mainly… I eat salads because ordering a salad with a side of fries makes me feel a hell of a lot less guilty than ordering a burger with a side of fries.
