I feel like I say this every week but I can not believe how fast this Whole30 challenge is going. Only 9 days to go! I will do my final recap after the 30th day.

Shop Whole30:

This week was full of firsts for me! I went shopping and not only did I go down a size (woohoo!) but I felt confident enough to buy not one, but two bodysuits. That’s right,  I channeled my inner Beyonce and rocked that shit! I am shooting one of them this weekend and I can’t wait to show it to you all! This week was also the first time I ventured out to dinner and to happy hour. I thought I would be tempted at happy hour.. with the wine… or the mac and cheese… or the Ruben bites. But it actually felt good to just order hot tea and be that weirdo who pulled a chicken breast and a packet of almond butter out of her purse. Sorry, I’m not sorry. It’s strangely powerful to be able (and excited) to say no to the things I used to not be able to resist. Especially when everyone else around you is eating it. It’s empowering to realize that you are making the healthier and more responsible choice.

I am going out to dinner with a friend tonight and it will be the first time I actually order food from a restaurant. Luckily, I have people who have done hardcore research and told me what to order ahead of time. So if you’re in California and have a Tender Greens near you, go ahead and order the salt and pepper chicken on arugula with the tarragon dressing (also the roasted broccolini, sweet potatoes and fingerling potatoes are okay too!).
I also cooked some pretty amazing meals this week. Starting with the eggs benedict pictured above. I literally ate eggs benedict once a week in college, I have many people who can attest to this! It is a weakness of mine. I am SUCH a brunch and breakfast person. My friend Hillary recommended that I follow @TheWholeSmiths on Instagram and that is where I saw the recipe for the hollandaise sauce. I also made the sweet potato “buns” per her reccommendation. I made my benedict with Paleo bacon, poached eggs and a little paprika for garnish. It was seriously so good! To be able to make one of my favorite dishes in a healthy and compliant way made my entire day- ok well the Seahawks losing right after definitely helped too!  Joe made me the crackling chicken from Nom Nom Paleo- I absolutely loved it and we will be making it next week. It was so crispy even though we used skinless chicken!
Next week, I am going to channel my inner Chrissy Teigen and try and make shakshuka so stay tuned for that! Please let me know if you have any favorite Whole30 recipes!

Salt & pepper chicken on arugula with tarragon dressing from Tender Greens.
