Two Peas Tortellini Toscana Crock Pot Soup

As all of you know – it is CROCK POT SZN.

Literally as soon as October hits I throw everything in my fridge in the crock pot and hope for the best. Anyhow – yesterday I had bought all the things to make my Turkey Orzo Veggie Pasta – but instead I figured I’d throw it all in the crock pot and see how things went. I had a package of tortellini and some kale in the fridge, so I threw that in at the end as well – and boom – Tortellini Toscana Crock Pot Soup. It’s hearty… semi healthy (lots of veggies)… it feeds a crowd… and it is DELICIOUS!

What I love about crock pot SZN is that you seriously can’t mess a crock pot recipe up. Leave it on for too long? NBD – you can let it cook for as long as you want on low. Don’t have EXACTLY the right ingredients? NBD – sub whatever you want. Not in the mood to eat it that day? NBD – freeze it after you cook it.

Tortellini Toscana Crock Pot Soup Ingredients:

  • 2 – 19.5oz packages of turkey sausage – *** we use the Jennie-O hot Italian sausage*** you can use regular sausage too, but the turkey sausage makes this a little lighter
  • 2  – 32 OZ boxes chicken stock (I used 3… but depending on the size of your crock pot… you can add the third after)
  • 1 red bell pepper – chopped
  • 1 orange bell pepper – chopped
  • 1 yellow bell pepper – chopped
  • 1 yellow onion – chopped
  • 4 cloves garlic – chopped
  • 1 tbsp basil
  • 1 tbsp oregano
  • 1 tbsp salt and then more to taste
  • 1 tsp parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp red pepper flake
  • one bay leaf
  • one package of three cheese tortellini – if you want to make this GF or dairy free, you can easily sub gluten free pasta or quinoa!
  • 1 bunch of kale – washed and chopped
  • one cup of half and half – you can use heavy whipping cream if you like a creamier soup – or you can omit completely to make it dairy free.
  • Parmesan cheese to top, and serve with bread

Tortellini Toscana Crock Pot Soup Directions:

  • Remove sausage from the casings and brown in a pan with a tablespoon of olive oil
  • While the meat is browning, chop all your vegetables
  • If I have time, I like to sauté my vegetables (peppers, onions and garlic) in the same pan after I have browned the meat. It just makes them more tender in the soup. But if you are short on time feel free to skip this step and throw your veggies in raw.
  • Place the chicken stock, turkey sausage, vegetables, and spices into the crock pot and cook on high for 4 hours. Then turn to low.
  • About an hour before serving, mix in the half and half, the kale and the tortellini (or whatever pasta you have on hand).
  • Serve with parmesan on top and fresh bread.
