My husband and I are taking a trip to Mexico to celebrate my birthday – we leave in a few weeks – and I am trying to eat as healthy as possible. That being said, you will be seeing these healthy egg white bites – or egg muffins – A LOT on our feed in the next month.

How do you make healthy egg white bites? 

— I first posted the recipe on our blog >>> here… but I am so happy to be sharing it again. Breakfast, for me, used to be the hardest meal of the day to get right. When I was bond trading, I would leave my house between 4:30 and 4:45am, and by 7am I was reaching for whatever was around, That lead to a lot of bad food decisions.

As with all things, preparation is key – so I learned how to easily meal prep my breakfasts. These healthy egg white cups are key. They’re SO SO  SO simple.

Directions:

  • Preheat your oven to 350 degrees
  • Spray a muffin tin with cooking spray,
  • Scramble some eggs – or egg whites for egg white cups
  • Pour the eggs in the muffin tin.
  • I like mine plain, to try and cut back on fat and calories. Feel free to add in whatever sounds good to you. Cheese, scallions, bacon, sausage, sautéed  peppers… whatever.
  • Place the muffin tin in the oven
  • Bake for 25 -35 minutes depending on your oven

Poof – breakfast in a pinch. You can keep them in the fridge, heat them in the microwave, and eat them whenever you like. They’re delicious and they deliver the protein you need to keep you going throughout the day. As an added bonus – my kids are obsessed with them, and they make breakfasts for them SO much easier as well!

What temperature do you cook healthy egg white bites at? 

— You cook healthy egg white bites at 350 degrees for 20-35 min depending on your oven. My oven doesn’t cook evenly – so we lean towards the 35 minute side of the spectrum.

Can you make these healthy egg white bites with the full egg? 

You totally can. I prefer egg whites to the full egg, but you can make whole egg muffins just as easily.

How long do they last in the fridge? 

I make mine on Sunday and try to eat them by Friday – so 4-5 days. The internet says 4 days,  but I push that timeline quite frequently

How do you reheat these healthy egg white bites?

You can easily reheat them in the oven, or on the stove, but for ease, I usually just microwave them for a minute!
